This morning I am feeling super accomplished because before the baby has even gotten up for the day I made breakfast burritos to put in the freezer for a quick breakfast! And on top of that I even ate breakfast myself. With Stan. At the table. Whaaat!? Honestly, this is one of only a few times I have ever accomplished anything substantial before the baby has gotten up. Usually I am dragging myself out of bed wishing she would quietly lay there for just 10 more minutes. But alas, she squeals with an awake-ness I will never know and there is no prolonging second breakfast.
Eating breakfast has always been a challenge for me. There just never seemed to be time and I don’t ever want to eat just as soon as I wake up. With a baby though, it became more important to make sure I got something to eat in the morning. If I didn’t eat something in the morning it would be 1 or 2pm before I got a chance to eat something for a while there. Not eating deprives you of that much needed energy you long for when caring for a baby all day. Also, while breastfeeding the calories and nutrition from food is even more important! When I was working on getting Evelyn on some sort of schedule I made sure that my meal times were incorporated into the schedule as well. Of course as she got a little older and a little more patient this helped a lot. Now one of her daily activities is to sit in the kitchen with me and watch me make and eat lunch. Sometimes she just watches me make it and then I have to eat it while feeding her. But that is better than no lunch!
One thing that helped me a lot, was when I make something for dinner I usually try to make extra so I can just heat it up and have it for lunch the next day. Fruit and sandwiches cut in half are also really easy things to eat when you have to eat while feeding a baby because you usually eat them with one hand anyway! And when you need both hands…I am guilty of using my baby as a table. I’ve propped that macaroni bowl up on her and had a nice peaceful lunch. I’ve learned you just have to do what you have to do! Making eating a priority has made my life a lot easier. Don’t forget the water too! I keep my water bottle full all day long and right next to me.
Hopefully these breakfast burritos will make eating something in the morning even easier. It will be nice to just grab one and pop it into the microwave! They are even pretty healthy…to fit in with our lifestyle change 🙂
Breakfast Burritos
- 1/2 pound turkey sausage
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1 small onion
- 8 eggs
- 8 whole wheat tortillas
- Shredded cheddar cheese
- Brown turkey sausage. Transfer to a bowl and set aside.
- In same pan used to brown turkey, saute peppers and onions.
- In a large skillet scramble eggs.
- When eggs are almost done, mix in sausage and peppers.
- Scoop onto tortillas and top with shredded cheese.
- Roll tortillas and let cool completely before wrapping in plastic wrap. Place individually wrapped burritos into large freezer bag and freeze.

That is a great idea! We never eat breakfast at the same time around here, so this would make it easier for us both to just grab something yummy quickly!
